Do you ever really know when you’re buying a filet fish at the grocery store if it’s really what the label says? Wild caught salmon looks just like farmed salmon, but costs a lot more. And it’s not just fish. There’ve been lots of scandals tied to meat being mislabeled. Chemists at the University of Texas at Austin, including graduate student Abby Gatmaitan, have adapted a medical device to analyze raw meat on the spot.
