It’s a sure sign that a rough neighborhood is transforming into a hipster hotspot when a new coffee shop opens up, sporting organic brews and smoothies. An upscale restaurant usually follows, then perhaps a weekend farmer’s market. Before too long, new condos and art spaces move in, along with wealthier—and often whiter—residents. Professor of sociology at Colorado State University Joshua Sbicca shares some insight into the power food has on gentrification. Sbicca is the co-editor of the book "A Recipe for Gentrification: Food, Power, and Resistance in the City."
