It’s called koji and Chef Jeremy Umansky swears it makes almost anything taste better. Umansky owns Larder Delicatessen and Bakery in Cleveland, Ohio and is co-author of “Koji Alchemy: Rediscovering the Magic of Mold-Based Fermentation.”
